     Being Italian, you know I like my pasta and tomato sauce. When one makes the sauce, one gets great tomatoes, great onions and great everything to go into the pot. A good cook would never use under-ripe or moldy tomatoes. One way of saying this is that each ingredient that makes up the recipe has to stand on its own - or its not very good sauce.
